Lemon apple tart
blend in a processor,1cup of gluten free flour,3 tbsp ground almonds, 2tbsp sugar,1/2 tsp baking powder,grated zest of 1 lemon and 100g butter.  Add 1 egg and whizz till combined. Push into a flan dish with the back of a spoon and put into the freezer for at least an hour.
When ready to cook tart put the oven on at 180.
Melt 60g butter in a pan, then add 100g sugar, 2 grated whole apples,juice and zest of 1 lemon and 1 egg. Mix together and put in the frozen pastry case.
Bake for about 30 minutes

Mushroom Pate
Melt 2 tbsp butter in a pan, add 200g wiped chopped mushrooms and a sprig of thyme, cook gently for 20 minutes. Turn the heat off and add the zest of a lemon. Cover and leave until cool. Tip into a processor and squeeze the juice of a lemon into the cooking pan, then add this to the processor with two handfuls of parsley,salt and freshly ground black pepper,  1 clove of garlic -crushed and 200g cream cheese.  Process until smooth
