Glamorgan Morsels

2 cups cooked and mashed kumera or kumera and potato mixed

2 tbsp butter

2tbsp chopped parsley

2 chopped leeks softened in 1 tbsp butter

2 tbsp gluten free flour

1/2 tsp thyme,leaves only

1 sage leaf chopped

1tsp rosemary leaves,chopped

1/4 tsp mustard powder

2 eggs, beaten

1 block feta cheese

salt and freshly ground pepper.

Mix everything together, spoon onto non stick baking paper and bake at 170 degrees for twenty minutes or until golden

Quinoa, Cranberry and Orange Bites

200g white quinoa soaked in water for a couple of hours, rinsed and brought to the boil in 1 1/2 cups of fresh water,with 1tsp vegetable stock powder - simmer for 12 minutes. Add 1/2 cup dried cranberries, juice and zest of 1 orange, 1/2 tsp thyme leaves, 1 tsp rosemary leaves and 1 sage leaf -finely chopped, cover and leave to cool.  Add 1/2 cup chopped parsley and 1 bunch of finely chopped spring onions. Add 1 beaten egg and season with salt and freshly ground pepper then mix well. Spoon onto an oiled sheet of baking paper, brush with oil and bake at 170 degrees for twenty minutes or until golden.
